Salt and Vinegar Almonds (Blue Diamond Imitation)

There are a lot of recipes out there for salt and vinegar almonds, but they never turn out as intense as the salt and vinegar almonds you buy from the store. This recipe however is plenty intense! If you are like me and need to avoid safflower oil, this recipe allows you to enjoy intensly vinegar-y almonds make with an oil of your choice.

You do need to purchase malic acid to be able to make this recipe, but think of it as an investment! Cheaper, healthier and delicious salt and vinegar almonds! Plus you can use malic acid in other recipes, including in tomato-free tomato sauce and in homemade sour patch kids-like treats. You can find many malic acid options on amazon. I use this one.

Instructions

If you are starting with raw almonds instead of roasted almonds, you need to roast the almonds to get the familiar crunch of the Blue Diamonds almonds. This will take around 10 minutes or more. The first time you make this recipe, watch the almonds closely because they go from cooked to burnt very quickly. All ovens are different so be sure to figure out what works for your oven. Be careful to not overcook the almonds at this stage because there is still one (short) cooking step to follow.

After the almonds are roasted, add them to a pan over medium heat with your remaining ingredients. Stir continuously for a few minutes until your salt and "vinegar" sticks to your almonds. You and now done! Dump your almonds on a plate and allow to cool for 10 minutes (they will be deceptively hot if you eat them right away). Enjoy!

  1. Heat oven to 325 F.
  2. Spread your almonds on a baking sheet. Do not add any oil at this point. Roast in the oven for 10-15 minutes. Watch your almonds carefully! They will be done once they turn a darker brown. When in doubt, take them out! You do not want to overcook them at this point. You will likely need to (carefully) taste test starting at 8 minutes until they are crunchy enough. They will be very hot, so taste carefully.
  3. Add the roasted almonds to a pan over medium heat with the remaining ingredients. Stir continuously until the ingredients stick well to the almonds, about 3-5 minutes.
  4. Remove from the pan and allow to cool for at least 10 minutes, then enjoy! Store in an airtight container.
